Cheese of the Month

Our Cheese of the month is Parmigiano Reggiano.

The Cravero family has been involved in cheese since 1855 when Giorgio Cravero, head of the family at the time, began to select and sell Italian cheese. We sell Parmigiano made by the two smallest producers that Giorgio buys from, both located in the village of Benedello di Pavullo in Modena: ‘Baruffi’ and ‘San Pietro.’cheeses.

Baruffi is notable for its sweetness and fruity aromatic flavour, with abundant mouthwatering high notes. San Pietro is a deeply-savoury, brothy-flavoured cheese full of rich bass notes.

Parmigiano Reggiano is not just for grating in Italian pasta dishes but can be tasted in slivers accompanied by raw vegetables, such as celery and cherry tomatoes, or by a not-too-spicy chutney, eg apricot. Enjoy it with fresh fruit, such as apples and pears. It is great with any type of nuts and dried fruit (walnuts, hazelnuts and figs), and is superb with dried plums. Why not try cooking the cheese rind in vegetable soup?

The winner of this month’s prize draw is the lucky recipient of a large chunk of Parmigiano Reggiano along with some delicious Martelli pasta and a jar of tomato passata. Enjoy!
