Traditional Butchery


Our award winning venison and a wide range of wild game is available on the counter when in season. Cowdray wild Fallow and Roe deer are naturally managed in the Estate’s woods by our Deer Manager.  We regularly stock local pheasants, partridge and rabbits and with a little notice we are able to source whatever else is in season.


Hereford and Sussex Beef are reared at Cowdray Home Farms for 30 months & matured for a minimum of four weeks to ensure exceptional tenderness and flavour, the butchers will hang for longer if customers request. We also source beef from Hampshire. Rare and traditional breeds are regularly available, White Park, Highland, Belted Galloway, Dexter are all breeds stocked. Call Steve and his team to enquire which breeds and cuts are available.


Our lamb is sourced from Andy Hodgkins who farms the South Downs on Cowdray Land. His Romney crosses are grass fed for their entire lives.


We source traditionally reared free-range pork from local Plantation Pigs who farm on the South Downs near Brighton.


We source our delicious succulent chickens, guinea fowl, duck and quail from Creedy Carver in Devon.


Our sausages are handmade on-site in small batches. We use traditional methods, natural skins and selected cuts of the finest free-range pork, beef, lamb and venison, blended with gluten free rusk and herbs and spices. Our Breakfast Sausages were awarded 2 stars at The Great Taste Awards and were the only sausage to get more than one star out of 10,000 products entered. Our authentic Boerewors and Merguez lamb sausages are also establishing a loyal customer following.

Smoked Products

All of our bacon and gammon is dry cured and in-house smoked bacon and gammons are smoked over apple wood chips for fantastic results. Our butchers are happy to experiment with different cuts and the elusive ‘Collar Bacon’ can occasionally be found if you are in luck.


Free range Turkeys and Geese from Great Garnetts in Essex will be available to order for Christmas. Three Bird roasts are made in house.
