Game

Our award winning venison and a wide range of wild game is available on the counter when in season. Cowdray wild Fallow and Roe deer are naturally managed in the Estate’s woods by our Deer Manager.  We regularly stock local pheasants, partridge and rabbits and with a little notice we are able to source whatever else is in season.

Beef

Hereford and Sussex Beef are reared at Cowdray Home Farms for 30 months & matured for five weeks to ensure exceptional tenderness and flavour. We also source beef from Hampshire.

Lamb

Our lamb is sourced from local suppliers.

Pork

We source traditionally reared free-range pork from local Plantation Pigs who farm on the South Downs near Brighton.

Poultry

We source our delicious succulent chickens, guinea fowl, duck and quail from Creedy Carver in Devon.

Sausages

Our sausages are handmade on-site in small batches, with no artificial additives or preservatives. We use traditional methods, natural skins and selected cuts of the finest free-range pork, beef, lamb, venison, blended with breadcrumbs and herbs and spices. Our authentic Boerewors and Merguez lamb sausages are establishing a loyal customer following.

Smoked Products

All of our bacon and gammon is dry cured and smoked over apple wood chips for fantastic results. Our butchers are happy to experiment with different cuts and the elusive ‘Collar Bacon’ can occasionally be found if you are in luck.

Turkeys

Turkeys, Geese and Three Bird Roasts will be available to order for Christmas. We source our free range Bronze Turkeys from Woolley Park Farm, Wiltshire.
