We are hosting a Venison Evening on Saturday 7th October.
This will include a talk on deer, a butchery demonstration and a seven-course venison-themed dinner with fine wine to match the food.
The evening will start with a talk at 6.30pm by Cowdray’s Deer Manager Jason Griffin, one of the country’s few full-time deer managers. He will describe the various species living on the Cowdray Estate as well as their habitat, diet and how he effectively manages the deer population to reduce damage to the estate’s forests and farms.
There will then be a demonstration by Butchery Manager explaining the various cuts and how they are used.
This will be followed by a seven-course venison-themed tasting menu including dessert and cheese, accompanied by six carefully selected wines. The wine expert will give a brief preamble on each wine.
