The Recipe

A probiotic twist on the timeless classic just in time for Shrove Tuesday. Susana & Daughters kefir, made with milk produced on the Estate, makes an ideal and healthy substitute for buttermilk in these fluffy, American-style pancakes.

Ingredients

  • 500ml Susana & Daughters Cowdray Estate Kefir
  • 1 egg
  • 2 tbsp Cowdray Estate Honey
  • 1tsp vanilla extract
  • ½ tsp salt
  • 350g plain flour
  • ½ tsp bicarbonate of soda
  • South Downs salted butter

Method

  1. In a large bowl or jug, whisk the kefir, egg, honey, vanilla extract and salt.
  2. In a separate bowl, sift in the flour and bicarbonate of soda and mix.
  3. Add the kefir mix to the flour mix and stir together to make a thick and smooth batter. Leave to stand for 15 minutes.
  4. Add a generous amount of butter to a frying pan on a medium high heat and cook for two or three minutes until tiny bubbles appear and the pancake has risen nicely, then flip and cook on the other side until the batter is firm and cooked all the way through.
  5. Serve with maple syrup, Cowdray granola and fresh berries.
