This delicious recipe is perfect for these early Spring mornings.
You will need:
- Six sticks of forced rhubarb, cut into 4cm pieces
- Two tbsp runny honey
- A squeeze of lemon juice
- Thick Greek yoghurt
- Cowdray Granola (for sprinkling)
Method:
Heath oven to 200C/fan, 180C/gas 6
Slice rhubarb into 4cm chunks before placing in a baking dish, drizzling with honey and a squeeze of lemon.
Cover tightly with foil and bake for 15-20 minutes, or until rhubarb is very soft.
Leave to cool.
Once cool, layer rhubarb followed by Greek yoghurt in a tall desert glass until full.
Finally, top with Cowdray Granola and enjoy!
