The Recipe

Sussex Charmer Cheese, made in Rudgwick, West Sussex has a unique flavour profile when used in cooking or baking. The creaminess of this mature farmhouse cheddar with the strong taste of an Italian hard cheese, contrasts perfectly with the heat from Tracklements Strong English Mustard in these simple scones.

Ingredients

  • 225g Wessex Mill self-raising flour, plus extra for dusting
  • A pinch of salt
  • 1 tsp baking powder
  • 55g chilled south downs butter, cut into cubes
  • 120g Sussex Charmer cheese
  • 1 teaspoon of Tracklements Strong English mustard
  • 90-100ml oat milk, plus 1 tbsp for glazing

Method

  1. Heat the oven to 200C/180C fan and place a large baking tray inside.
  2. Sift the flour, salt, and baking powder into a bowl and thoroughly combine.
  3. Add the butter to the bowl and combine with your fingertips until it resembles breadcrumbs.
  4. Sprinkle 100g of Sussex Charmer into the breadcrumb mixture and rub together until evenly distributed. Try not to mix too much as the heat from your hands may melt the butter.
  5. Make a well in the centre of the mixture and in a jug mix the oat milk with the mustard. Pour enough liquid into the well to make a soft but firm dough.
  6. Lightly flour a surface and roll out the dough to approximately 2cm thick. Cut out the scones with a medium (about 8cm) cutter, then put on a sheet of baking parchment, glaze with a little oat milk and sprinkle with the remaining cheese. Slide onto the hot oven tray.
  7. Bake in the oven for 15-20 mins or until golden brown and cooked through.
