Wellesley Cheese

Our cheese of the month for September is Wellesley. It’s a raw goat’s cheese made by Will and Caroline Atkinson in Somerset.

It has a firm and smooth texture, with rounded edges and a thin grey rind dusted with natural (uninoculated) moulds. It is a delicate and aromatic cheese: gentle and milky rather than punchy, but with a complex and lingering flavour.
