{"id":6690,"date":"2014-09-05T10:35:20","date_gmt":"2014-09-05T10:35:20","guid":{"rendered":"https:\/\/www.cowdray.co.uk\/?p=6690"},"modified":"2014-09-05T10:35:20","modified_gmt":"2014-09-05T10:35:20","slug":"estate-venison","status":"publish","type":"post","link":"https:\/\/www.cowdray.co.uk\/estate-venison\/","title":{"rendered":"Estate Venison"},"content":{"rendered":"<p>Cowdray Estate Wild Venison is back in season on our butcher\u2019s counter.\u00a0 We\u2019ve picked a recipe which is quick and easy and will ensure you enjoy the full flavour of this delicious meat.<\/p>\n<p><b>Fillet of Venison<\/b><\/p>\n<ul>\n<li>\u00a0Fillet or loin of Cowdray venison<\/li>\n<li>Red wine<\/li>\n<li>2 garlic cloves<\/li>\n<li>1 onion<\/li>\n<li>1 carrot<\/li>\n<li>Celery stick<\/li>\n<li>Rosemary<\/li>\n<li>Rosebud redcurrant jelly<\/li>\n<\/ul>\n<ol>\n<li>Marinade the fillet\/loin overnight in red wine, a little port if you have any, 2 garlic cloves (crushed), chopped onion, sliced carrot, stick of celery and rosemary. You could also add some crushed juniper berries.<\/li>\n<li>Brown one side over a high heat in half oil, half butter, then lower the heat and cook for another 3-5 minutes.<\/li>\n<li>Turn the heat up and do the other side.<\/li>\n<li>Keep the venison warm on a plate, deglaze the pan with the marinade, add a couple of teaspoons of reducurrant\/other jelly, melt, then gradually whisk in 25g butter which will thicken the sauce slightly.<\/li>\n<\/ol>\n<p>Serve with and mashed potato and steamed vegetables.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Cowdray Estate Wild Venison is back in season on our butcher\u2019s counter.\u00a0 We\u2019ve picked a recipe which is quick and easy and will ensure you enjoy the full flavour of this delicious meat.
