  • 50ml white wine
  • 4 clementines (zested peeled and pith removed)
  • 50g amaretti biscuits (crushed)
  • 300ml double cream
  • 60g sugar
  • 150g plain yogurt


  1. To a large bowl add the white wine, double cream, clementine zest and sugar and whisk until soft peaks form.
  2. Carefully fold in the yoghurt.
  3. To start building the fool, add some clementine segments to the bottom of a dessert glass followed by some amaretti crumb and cream mix and repeat.
  4. Finish with some segments on the top and more amaretti crumb.
