The Recipe

Celebrate Sussex cherries with this simple and delicious cheesecake-inspired recipe.


  • 300g Sussex Cherries
  • 1 tbsp (heaped) Cowdray Honey
  • Squeeze of Lemon
  • 200g Greek Yoghurt
  • 200g Mascarpone
  • 1 tsp Vanilla Extract
  • 100g Amaretti Biscuits


  1. Slice cherries and remove the stones.
  2. In a medium saucepan, combine the cherries, honey and water over medium heat and stir until softened (approximately three minutes).
  3. Remove the pan and leave to cool, adding in a squeeze of lemon to the cherry mixture.
  4. In a bowl mix the yoghurt, Mascarpone and vanilla until smooth and evenly textured.
  5. Place the amaretti biscuits into a bag and crush into crumbs.
  6. Finally, assemble the cheesecakes into small glasses of your choosing. Start with the amaretti crumbs, then carefully spoon in mascarpone and yogurt mix then top with the cherry coulis.
  7. Serve immediately or chill in the fridge for up to 24 hours before serving.
