Fluffy banana and almond pancakes, perfect for a Shrove Tuesday morning.

  • 75g flaked almonds
  • 275g self-raising flour
  • 375ml soya milk
  • 150g banana
  • 75g demerara sugar
  • 1 tsp baking powder
  • 200ml Oatly crème fraiche
  • 3 extra bananas (sliced)


  1. Blend the 150g of banana with the soya milk.
  2. In a separate bowl add the flour, baking powder and blended banana mix and whisk until smooth.
  3. Add a teaspoon of olive oil to a non-stick frying pan on a medium heat and pour in a ladle of the pancake mix.
  4. Whilst your pancake is cooking, lay some banana slices on the top and add a good pinch of flaked almonds and another good pinch of demerara sugar.
  5. When the underside is golden brown flip the pancake and cook for 2-3 minutes or until the sugar is melted to a rich caramel .
  6. Finish with the Oatly crème fraiche and plenty of sliced banana.
