The Recipe

These gently spiced poached pears are a delicious and light dessert after a festive feast. All ingredients are available to purchase from Cowdray Farm Shop.


  • 4 pears
  • 1 bottle of Les Lauriers Grenache or Carignan
  • 8 tablespoon caster sugar
  • 2 cinnamon sticks
  • 1 star anise
  • 4 cloves
  • ½ teaspoon nutmeg
  • 1 vanilla pod or 1 teaspoon vanilla essence
  • ½ tablespoon orange zest
  • ½ tablespoon lemon zest


  1. Combine all the ingredients, expect the pears in a saucepan and gently bring to the boil.
  2. Simmer the liquid gently for 5-10 minutes, whilst you peel and core the pears, leaving the stalks intact for decoration.
  3. Drop in the pears and continue to simmer for around 30 minutes, gently turning the pears occasionally to ensure they cook evenly.
  4. Remove the pears and then reduce the remaining sauce by about half strain into a jug and pour over the pears.
  5. Serve immediately with either cream or vanilla ice cream.
