The Recipe

Avocado & Pink Grapefruit Salad. This is a fresh and delicious salad, with the tart flavour of grapefruit combined with a creamy avocado.

Created by Cowdray’s Executive Chef, this bright and refreshing salad is the perfect accompaniment to a BBQ, and can be enjoyed outside in the sunshine for an alfresco lunch or dinner, or as a delicious side dish. View our other recipes here.


  • 2 ripe avocados, diced into 1cm cubes
  • 1 pink grapefruit, skin and pith removed
  • 3 tbsp toasted pumpkin seeds
  • 2 spring onions washed and finely sliced
  • 3 tbsp sour cream
  • 2 slices of thick cut sourdough
  • 2 cloves of crushed garlic
  • Salt and pepper


  1. Preheat your oven to 180⁰C fan.
  2. Tear up the sourdough and toss in the olive oil, crushed garlic and salt and pepper. Place on a tray, bake for 10 minutes then set aside and leave to cool.
  3. Slice the grapefruit into circles and then quarter
  4. In a large bowl gently fold together the grapefruit, avocado, pumpkin seeds, and croutons before drizzling over the sour cream and spring onions.
