Gorgonzola di Capra

Enjoy a taste of Italy with this delectable ‘formaggio’.

This “Goat Gorgonzola” is produced in Lombardy, Italy, using raw goat’s milk aged approximately 60-90 days. Gorgonzola is part of an illustrious family of blue cheeses, formed when ambient molds infiltrate the curing cheeses. This cheese is modeled on ‘Gorgonzola Piccante’ but made with 100% goat’s milk. There is a sharp note of blue mould at the beginning that gently rolls away to a creamy mid-palate and a delightfully clean but robust lemony finish with hints of fresh sweet goat’s milk.
